eating clean: since i’ve been home, i have basically made a lifestyle change in regards to the things i eat. i don’t eat meat, and i eat dairy only in very minimal amounts (because it hurts my tum) and the bulk of what i eat has been fresh fruits and vegetables! its a christmas miracle. anyways, here are some of the things my sister mal and i have made/been eating.
starting from the top: vegan banana mini muffins with cinnamon sugar dusting; chia seed pudding with almond milk, honey, blueberries and bananas; spinach salad with feta, almonds, currants and cilantro lime dressing; the fruits/veggies that went into my juice this morning; fajitas: green peppers, onions, mushrooms, and broccoli sautéed with turmeric, garlic, and salt/pepper, served on homemade tortillas; fajitas (again): black beans, guacamole, cheese, plain nonfat greek yogurt, peppers, onions, mushrooms, cauliflower, homemade tortillas; greeeen juice: kale, green apples, bananas, carrots, ginger; our picnic: kale salad (kale, shaved carrots, cilantro, golden raisins, almonds, citrus ginger dressing), homemade hummus, homemade tortillas, mango corn salsa, red peppers, and grapes.
its fun and easy to eat healthy when you can cook and experiment. i love food.
